Ingredients:
Lemons – 500g (about 8–10 medium-sized)
Salt – 3 tbsp
Turmeric powder – 1 tsp
Red chili powder – 1.5 tbsp (adjust to taste)
Asafoetida (hing) – ¼ tsp
Sugar – 100g (optional, for a sweet-spicy version)
Mustard seeds (crushed) – 1 tbsp (optional)
Mustard oil – 100–150 ml (or as needed)
Instructions:
1. Prepare the Lemons:
Wash and dry lemons thoroughly (no moisture!).
Cut into small pieces or quarters (remove seeds for smoother taste).
2. Initial Marination:
In a bowl, combine lemon pieces, salt, and turmeric.
Mix well and transfer to a clean glass jar.
Keep it in sunlight for 10–15 days, shaking or stirring daily. Lemons will soften and release juice.
3. Add Spices:
Once lemons are softened, add red chili powder, hing, and (if using) sugar and crushed mustard seeds.
Mix thoroughly.
4. Temper with Oil (Optional):
Heat mustard oil until it smokes, then cool slightly.
Pour over the pickle and stir well.
Let it sit for another 3–5 days in sunlight, shaking the jar daily.
Shelf Life:
Lasts up to 1 year in a cool, dry place. Make sure lemon pieces remain submerged in oil or their own juice.
